Easy Broccoli Cheese Casserole, with a Kick!

Happy Labor Day, friends! Where did August go?? Last month, I got to sample the Primo Picks at HEB, once again. And, the August picks were delicious! Lots of hatch green chili flavored goodies. I'd show you a picture of the hatch green chili tortilla chips, but they disappeared mighty quickly. Among the samples was a jar of hatch green chili queso. SO good! I decided to use it in a very easy broccoli cheese casserole and the results were tasty...and, just a little spicy. We decided to call it Broccoli Rice Casserole, with a Kick. 

This is the jar of queso. Can you tell one of my family members (who shall remain nameless) helped himself to some of my dip (*cough*Joseph*cough*)? It's okay, I only needed 1 cup for this recipe, so, I'll let it slide. This time. ;)

(Easy!) Broccoli Cheese Casserole, with a Kick

1/2 C. Broccoli (diced into small pieces and steamed)

1 C. Central Market/HEB Hatch Green Chili Queso

3 C. Instant Rice

2 C. Water

Cilantro, to garnish. 

Mix queso and water and bring to a boil. Add broccoli and rice and stir. Remove from heat and replace lid. Let sit for 5 minutes, until liquid is absorbed and rice is tender. Garnish with fresh cilantro and serve hot. 

Yes, I used instant rice. Scandalous! I told you this side dish was EASY. If you are fundamentally opposed to instant rice, by all means, modify this with regular ol' long grain rice. I'm sure the results will be deliciously cheesy...with a kick! :)
