Rice Crispy Pops


You may recognize these treats from my sweet girl's first birthday party. They're my kind of recipe. EASY and makes for a pretty display. Who wants to deal with the hassle of those pesky cake pops, anyway? Mine never turn out pretty. But, these crispies? Easy, breezy...and, fun!




Bonus: Rice crispies are my hubby's favorite. So, it was like win-win-win-win.

Rice Crispy Pops:
6 Cups rice crispy cereal
1 bag of marshmallows
1/2 stick of butter
1/2 bag of wilton brand melting chocolate (in color of choice!)
24 decorative cupcake liners
24 lollipop sticks OR 12 paper striped straws, each one cut in twos

Make your rice crispy treats just like normal: in the microwave, melt the butter with (the contents from) a bag of marshmallows, stirring in 30 second intervals. When the marshmallows are melted, stir in rice crispies. To make the pops, let the rice crispies cool slightly and then begin rolling spoonfuls of it into balls, using your hands. You may want to use a bit of butter on your hands to prevent them from getting too sticky (but, I can't lie to you, this is a messy process).

Dip a lollipop stick or straw into your melted chocolate (prepared according to package instructions) and then place one in the center of each pop. Let the pops set while you roll the next pop. When all of the rice crispy pops are made, dip the bottoms into the melted wilton chocolate. Place the pops onto wax paper until the chocolate sets and then place them inside a decorative cupcake liner.

Serve in a pretty display!
