Frozen Iced Coffee- a Decadent Summer Treat


Summa-time! Yes, it's still in full swing here in Texas. And, for us, Summer is all about being with our friends and family. Today's recipe for Frozen Iced Coffee (using just two ingredients!) is perfect for enjoying some sweet (and refreshing!) moments with someone who makes you smile. If we can't slow down and savor life during these long Summer days, when can we??

Did I mention this recipe is a two-ingredient treat?! International Delight has a delicious line of iced coffees (I love the Mocha Light) and that's the absolute star of this frozen, iced drink!


Frozen Iced Coffee (for two!)



Pour iced coffee into an ice-cube mold and freeze. Repeat process with almond milk. To make frozen iced coffee, place iced coffee cubes and almond milk cubes into a high-powered blender (I use a VitaMix). Blend cubes on high until smooth and creamy. Divide into 2 large glasses and enjoy with a straw or a spoon! Sometimes I sprinkle cocoa powder on top, to make it extra fancy.



Yep, this recipe is as easy as it sounds! I eat mine with a spoon, because it makes a pretty thick treat- I'd say it's more on the ice cream/granita side than a simple frap. It's definitely a decadent way to share a Summer afternoon with your favorite friend!
