Don't you just love watermelon on a hot, summer day? I had a version of this fresh, minty watermelon salad several years back and I finally got around to making it myself. I didn't have the recipe, just a general concept, so I decided to experiment, take notes and share with you. Here goes...
Mint-Watermelon Salad
One Medium Watermelon3 Sprigs of Mint
3/4 Cups of Honey
3 Tablespoons of Lime
Cut a watermelon in half and, using a melon-baller, scoop approximately 6 cups of watermelon balls and place in a large bowl. Scrape the remaining watermelon and place (approximately) 3 cups of watermelon flesh and juice in a blender. Add mint, honey and lime and blend until smooth. Pour juice over the watermelon balls and let marinate for 24+ hours. Serve cold.
