Grilled Stuffed Avocado {A Quick 4 Ingredient Dinner!}




Do you have any quick, go-to dinners that your family loves? I have a handful and this is one of them! Easy, fast and yummy! Plus, when paired with a veggie (perhaps even served on a bed of greens!), this meal is healthy and balanced.

And, the best part? It's a 4 ingredient dinner. And, chances are, you have those 4 ingredients in your kitchen right now!

I like to keep cooked, shredded chicken in my freezer for fast grabbing when I need to make dinner in a hurry. To stock my freezer with chicken I either 1) poach a handful of boneless, skinless chicken breasts 2) buy a whole roasted chicken from the grocery store and freeze the shredded meat or 3) roast a whole chicken at home and then freeze that shredded meat. All three options require minimal prep, but offer me a wonderful shortcut on busy nights!

Grilled Stuffed Avocado (2 servings):


1 whole avocado, halved and removed from skin
1 1/2-2 cups of diced/shredded chicken, thawed (if previously frozen)
1/2 cup of prepared salsa
1/4 cup of shredded cheddar cheese, divided in two

Heat grill pan (or skillet, in the absence of a grill pan!) and place avocado, cut side down, on the pan to sear. When the tops are golden, flip the avocado halves and sear the bottom side. Remove avocado halves from the pan and set aside. Using the same pan, add your chicken and salsa, give it a stir and let it simmer in the pan until heated through. To assemble your stuffed avocados, place one avocado half onto each plate, fill each with half of the chicken mixture and sprinkle with half of the shredded cheddar. Serve hot! 

Yep, that's all there is to it!


My hubby says I never serve the same meal exactly the same way twice. Probably because I'm not much of a recipe follower. So, you can bet I've come up with LOTS of variations to this meal.

Here are a few of those:
switch the traditional salsa with salsa verde
add black beans
add cooked rice
add shredded, cooked zucchini/summer squash
add sauteed onions and pablano peppers
corn? sour cream? pico de gallo? 
The list could go on and on! Such a versatile dinner option!

  1. Yum! Random random question for you, Emily... in the days after Picnik, how do you watermark your pictures with the little washi tape logo? I always used Picnik to do that and it's kind of a pain to do that with GIMP, PicMonkey, and everything else I've tried... do you have any thoughts? I'd love to hear them! : )
