{Junior} Mint Chocolate Cookies




My hubby and I both got Junior Mints in our stockings this year (What? Is it odd that 30 years olds still get stockings from Santa their parents??).

And, then we got a candy basket from a friend filled with, you guessed it, Junior Mints.

Yum. But, we've been trying to eat less yum and more...broccoli. So, the Junior Mints have been in our pantry for months (yay, self-control!).

After looking at them in our pantry, lo these many months, I decided to come up with a recipe to rid us of these tasty treats. And, because of the whole, yay self-control thing, I wanted to make something that could easily be pawned off on our friends. Cookies fit that bill.

And, let me just tell you. These cookies are goooood. I added a tiny bit of green food coloring, because, you know, mint flavored things should be green. In case we get confused.

Oh, it was hard to part with these green, mint-chocolate yummies.

Darn self-control.

Darn broccoli.


{Junior} Mint Chocolate Cookies:
3 C. all purpose flour
2 t. Vanilla
1 egg
2 sticks of VERY soft butter
1 t. baking soda
1/2 t. baking powder
1 1/2 C. white sugar
1 regular sized (4 oz) box of Junior Mints
Green food coloring, as desired

**Mix flour, baking soda and baking powder in a bowl. Using a stand mixer, cream the sugar and butter together. Add in the egg and vanilla and beat until smooth. Add in the dry ingredients, a little bit at a time. Add the junior mints and, using the mixer's paddle, mix until the chocolate pieces are broken up and distributed through the dough. Add several drops of green food coloring to tint the dough green.

Roll 2 t. of dough into balls and place them on a cookie sheet FAR apart. I'll tell you why in a minute. For now, just trust me. These cookies spread a LOT. Bake at 375 for 6-9 minutes (I pulled mine out at 6 minutes and they were perfectly soft, even days later). Let cool on a cooling rack. And, then enjoy.

With milk. Preferably.

So, why do my cookies have a scalloped edge when I never mentioned rolling them out and cutting them? Well, I placed the dough balls too close together and they spread into a big, fat, mess.

And, because, hey, this is real life, I made do by using a round, scalloped cookie cutter to pretty up my cookies. Then I pretended like I did it all on purpose and wanted them to be scalloped.


But, then I told you my secret because we're friends and I'd hate to lie to my friends. 

Of course I took a picture of my goof (and goof solution) at night. In my dark kitchen. With my old-as-dirt iPhone.

Because again, this is real life.

(and, yes, I left my watermark off on purpose. Because, if you'd like to claim my old-as-dirt iPhone picture as your own...by all means, go for it.)

OH! And, I almost forgot to tell you...yes, I did make it to the next round of American Crafter! So, on Friday you'll get to see my Kid-themed project.

These look delicious but have a question about the Jr Mints (you know me and directions!!).... when you say a "regular" size box, are you talking the smaller movie theater size or the bigger one like you get at Walgreens in their 3 for $3 movie candy rack?!? Don't wanna over-mint the cookies right?!? :)

  8. First, congratulations on the self-control. You are way stronger than I am! Second, I am notorious for putting my cookies too close together and I never thought to use a cookie cutter afterwards. Genius! :)

  9. I got so tickled when I went back and really read your post. That is how I normally do it. Check the recipe (cause I am a recipe addict, after all)....and then later read. I was laughing out loud at your blunder and the fact that I thought you had some fancy cookie cutter. Then I saw what I thought was said....your dirt ass iphone photo. I kind of gasped because it is so unlike you to put something like that on your blog (not meaning you wouldn't say it....let's get real). And then I laughed even harder because I was convinced you have a dirty ass iphone. Ok....so....then I laughed because OF COURSE you didn't write that on your blog. Your mom did though...haha.

  17. Hi Emily ~ Thanks so much for this recipe. I literally just finished making them and my kids are eating them so fast I know I will need another batch for tomorrow:) Just a tip that might help. I did use very soft butter and put the dough in the fridge for a couple of hours. The cookies were more firm and didn't spread at all. Although I do love the way yours turned out, so maybe it's better if they spread!?! They're so yummy!
